Great Ideas for a Simple Dinner that Anyone can Make

Most people simply stop to get a hamburger or pizza when they don't have enough time to make a meal. But these are unhealthy eating options, and you can make healthy quick meals at home in about 20 minutes. The following are just a couple of simple dinner ideas that require very few ingredients and can be a perfect lunch or dinner option; an ideal option for couples, singles or families. It’s only a matter of planning your meals ahead of time, so you can have all the ingredients a recipe requires on hand.

Shrimp and Chorizo Spanish Rice 
This is a hearty dinner or lunch and a great treat on a cold winter’s night. Add some international zest to your cooking with this recipe, offering a small taste of Spain.
Ingredients: - 1 lb of long-grain white rice - 2 tablespoons of olive oil - 2 garlic cloves - 1 red onion cut into thin slices - 1 to 2 chorizo pieces cut into ¼ inch pieces - 2 tsps of mild paprika - 1 dried red chile sliced or torn into small pieces (Gaujillo) - ¼ lb of cooked and peeled shrimp - 1 cup frozen peas - 2 to 4 limes
Cook the rice as instructed by the package and set aside. Heat the olive oil in a large pan over medium heat. Add garlic and onion slices and cook for 3 to 5 minutes until the onion is translucent, then add the chorizo and the dried red chile. Cook until the chorizo is brown. Add the paprika and the shrimp and cook for another 3 minutes, then add the peas and the pre-made rice. Add salt and pepper seasoning to taste and serve with lime wedges.

Chicken Avocado Salad
 This fresh salad is great on any smummer day or evening. This makes a great light dinner or lunch and only takes a few minutes to make.
Ingredients:
- 1 cup boiled shredded chicken - 2 cubed avocados - 1 tbs. of chopped cilantro - 1 lime - Dash of salt - Bib lettuce Instructions
Place 3 to 4 bib lettuce leaves on each plate. Combine the chicken, avocado, cilantro and salt. Add a squeeze of lime and dollop a spoon or two in the center of the bib lettuce on each plate. The above are just a couple of ideas for quick meals you can make. These taste great, only take a few minutes, can save you money (less expensive than a restaurant) and are healthy. To integrate these to your meal plans all you need to do is decide to try one new recipe a week. Once you have a few recipes you like, you can add them to your current monthly meal plan to get a variety of dishes you continually make at home.
