And what I did with the corn was a dish my kids used to enjoy. During my working days, I used to have Indonesian maid. And she liked to fry this corn fritters for my kids and I think now they miss having these. I never really see how she did, I only had my share of eating.
Now what I did with the corn, it might do her injustice... I mean the corn fritters.... I think she added in pounded dried shrimps and big onions together with corn. Somehow much tastier...
As for me, I did my own recipe, I added in diced cucumber and together with the corn, I put in wheat flour, potato flour, an egg, pinch of salt and pepper....
And into the wok.....
So tasty as a snack! More to mini pancakes than fritters.

ReplyDeleteYes, I sometimes put corn in my soup, Very sweet and nice taste. Ah! I want to eat fritters again. Some people put chicken stock powder to make it oomph.
